Shannon Higgins with chef mentor Mick Riordan who is the head chef at Conrad St. James is working with Shannon to help refine her dishes ahead of the competition on 8th February at Lambeth College. Shannon’s main dish of chicken ballotine stuffed with soft cheese, spinach, nutmeg & lemon & wrapped in pancetta served with beetroot gnocchi in a white wine & cream sauce.
